How to Make Black Bean Quinoa Salad with Lime Agave Vinaigrette
If you are looking for an easy warm weather recipe, the Lime Agave Vinaigrette drizzled over the quinoa salad is just that. I think this dish could be enjoyed alone or as a side with grilled meat or fish. I find the pineapple so refreshing and the combination of lime and agave invigorating. Black Bean Quinoa Salad with Lime Agave Vinaigrette
Ingredients
- 2 c cooked quinoa
- 1 can black beans rinsed
- 1 c diced orange pepper
- 1 c diced pineapple
- 1 c cubed avocado
- 1/4 c sliced green onions
Lime Agave Vinaigrette
- Zest from 2 Limes
- Juice from 2 Limes
- 1/4 c light agave nectar
- 1/4 c olive oil extra virgin
- 1 tsp salt
- 1 tsp black pepper
Instructions
- Combine the first 6 ingredients in a large bowl.
- In a separate bowl, whisk together the vinaigrette ingredients.
- Drizzle the lime agave vinaigrette over the quinoa salad and gently stir to combine.
- ENJOY!
