Black Bean Quinoa Salad with Lime Agave Vinaigrette

Ingredients
  

  • 2 c cooked quinoa
  • 1 can black beans rinsed
  • 1 c diced orange pepper
  • 1 c diced pineapple
  • 1 c cubed avocado
  • 1/4 c sliced green onions
Lime Agave Vinaigrette
  • Zest from 2 Limes
  • Juice from 2 Limes
  • 1/4 c light agave nectar
  • 1/4 c olive oil extra virgin
  • 1 tsp salt
  • 1 tsp black pepper

Method
 

  1. Combine the first 6 ingredients in a large bowl.
  2. In a separate bowl, whisk together the vinaigrette ingredients.
  3. Drizzle the lime agave vinaigrette over the quinoa salad and gently stir to combine.
