Every Christmas morning, my family gathers for brunch at my brother and sister-in-law’s house. There is lots to eat, drink, and presents to be passed around. My mom, brother, and his family eat vegetarian though, so we often have quite a few dishes to make so that everyone has something to eat. A Tater Tot Casserole is delicious, easy to make, and can be either meat-y or meat-free.
Some years the non-meat-eaters have a sad little plate of fruit and toast. But this year I want to surprise everyone with a delicious hearty meat-free dish, Tater Tot Casserole with MorningStar Farms® Grillers® Crumbles™. Cooking for your vegetarian family members shouldn’t be difficult and my recipe is so easy to make.
Ingredients
1 bag MorningStar Farms® Grillers® Crumbles™
1 red pepper – diced
1 green pepper – diced
1/2 cup onion – diced
1 tablespoon olive oil
5 eggs
1 cup milk (I use Almond)
1 teaspoon salt
1 teaspoon pepper
1 teaspoon garlic salt
1 teaspoon parsley
1/2 bag mini tater tots
1 cup shredded cheese (plus 1/4 cup for topping)
Cooking spray
Directions
- Preheat the oven to 350 degrees F. Cook the red pepper, green pepper, and onion in olive oil over low heat for 1-2 minutes, then add the Grillers Crumbles to your pan. Cook on low for 5 minutes until everything is warmed through entirely.
- Coat your glass baking dish with cooking spray. Add the Grillers Crumbles mixture to the dish.
- Layer the tater tots on top of the Grillers Crumbles mixture.
- Whisk together the eggs, milk, 1 cup cheese, and seasoning. Pour over the tater tots.
- Sprinkle 1/4 cup of cheese on top and decorate with red and green peppers.
- Cover with tinfoil and bake for 30 minutes. Remove tinfoil and bake for 5-10 minutes more, or until you can insert a toothpick and remove it from the center clean.
Variations on Tater Tot Casserole
The meatless tater tot casserole with MorningStar can be enjoyed by everyone (on any day), not just Christmas morning brunch with my vegetarian family. My husband LOVES this casserole and we like to eat it for dinner on a cold winter night or as leftovers for lunch the next day.
You can add any other vegetables to this dish, use cow’s milk, almond milk, rice milk or even soy. You can also use veggie cheese if you have issues with dairy (like my little one)! My Meatless Tater Tot Casserole recipe can be made with real meat, like ham or bacon, too!
