As you all know, last holiday season my husband, daughters, and I were living at my parents house while we house-hunted. Even though it was wonderful to be all together during the holiday season, it was difficult to not have our own space. This year we finally have our own home and we’ve been hosting people over all month long. One thing I love to do the morning after a party is to use leftovers to make a quiche. A Ham, Potato, Onion and Cheese Quiche using a leftover Ham from dinner is delicious, filling, and perfect for a holiday brunch.
Easy Leftover Ham, Potato, Onion and Pepper Quiche
One of our many holiday traditions includes ham and potatoes for Christmas Eve dinner and quiche for Christmas morning brunch. I thought it would be fun to try using leftovers from our dinner in a quiche. Along with ham and potatoes, onions, red peppers, and cheese are items we always have on hand in the fridge.
If you want to make this Easy Leftover Ham, Potato, Onion and Pepper Quiche recipe, you’ll need the following ingredients and directions.
Ingredients
1 cup diced ham – I used leftover Uncured Ham
1/2 cup diced red peppers
1/2 cup diced onion
1/2 leftover baked potato, skin removed, diced
5 eggs
1 cup milk (I use almond)
1 cup shredded cheddar cheese
1 store-bought pie crust
2 teaspoons black pepper
1 teaspoon salt
1 tablespoon dried parsley
Directions
- Preheat your oven to 350 degrees Fahrenheit. Place pie crust in a pie dish.
- Whisk together eggs and milk in a large mixing bowl. Add ham, red peppers, onion, diced potato, shredded cheese and seasoning. Mix together.
- Pour the ingredients into the pie crust. Bake for 35-40 minutes or until the center is firm.
- Enjoy!
I really love the way the Uncured Ham adds a bit of smokey saltiness to the quiche. Combined with the onion, cheese, and red peppers, the quiche is tasty and filling, perfect for a cozy brunch or even afternoon lunch.
