There are some friends who just get it right every time they cook for you — and our friend Mike is one of them. His grilled romaine salad with gorgonzola is one of those dishes that never disappoints. Whenever he offers to cook we know we’re in for a delicious meal – and always hope for a version of his signature grilled romaine salad on the table.

The Grilled Romaine Salad Recipe Our Friend Mike Makes for Every Dinner Party
A few weeks ago we spend a long weekend on Cape Cod with our friends and their children. We have been close friends with them since they moved right down the street from us. The first night of our trip we decided to cook in our rental home and elected Mike as head chef. This particular night, he served grilled romaine topped with juicy tomatoes, crumbled gorgonzola, and a drizzle of balsamic glaze to go alongside marinated steak tips and roasted potatoes. It was perfection — smoky, tangy, and just the right balance to a hearty dinner.

Why We Love Grilled Romaine Salad (and Why You Will Too)
Grilled romaine is one of my favorite ways to eat a salad because it is always savory (and still crunchy when grilled just right)! Mike has a few variations of the dish. Other times, he’s made a grilled Caesar version with homemade dressing to accompany a perfectly cooked filet. Every variation is amazing — proof that grilled romaine deserves a spot on your menu all year long. I am already thinking of how I can bulk it up for our family vacation menu or make it fancy for our Christmas Eve spread.
