Sometimes all you need is an Easy Peasy Five Ingredient Pasta Dinner. Studying for the social studies portion of my Praxis II test was horrendous today. Too much information, not enough in the study guide, and only 30 questions on the actual test! Tomorrow is Science – hopefully I’ll have a better grasp on it.
Tonight B came home a little worn out from a busy second day at work. When he ran off to the gym, I decided that to cheer him up, I’d whip up some real food (we’ve had nothing but restaurant food for four days). My sources were limited, for we only made a quick trip to the grocery store last night. This was an easy meal using only five ingredients (plus salt and pepper to taste).
Five Ingredient Pasta Dinner
Ingredients
1 can Italian diced tomatoes
1 can garbanzo beans (rinsed and drained)
1 can black olives (drained)
1/2 cup Feta Cheese
1/2 box Penne
Directions
1. Boil water in med saucepan. Cook Penne until al dente. Drain.
2. When the water begins to boil, combine first three ingredients in a small saucepan and cook on medium heat until Penne is done.
3. In the medium pan, add Penne and ingredients from small saucepan. Crumble in feta. Season w salt and pepper. Enjoy!
Now it’s time for us to unpack – even though my eyes hurt from studying for 6 hours straight! We’ll be unloading boxes while our season four of Sopranos DVD plays through. Typing on my phone is a pain in the patoot and I can’t wait for real Internet tomorrow…and cable tv!!!!
By the way… I watched the same 3 episodes of Gossip Girl while studying today over and over again to drown out the construction going on outside our apartment window. I’ve got the first 7 episodes of Season One down by heart. Maybe I’ll start performing them for some quick cash.
I just found your blog!! I was almost a Destin bride – but had a minor issue with trusting vendors.. so moved the wedding back to Nashville, where we live! What a fantastically easy and yummy sounding dinner! Too bad my mister would eat one ingredient in there and that would be the pasta. He’s a little … picky. So maybe I’ll try it for me sometime and not share with him! 🙂 I hope you get unpacked AND internet! I have NO idea how to blog on my iPhone … and it really doesn’t sound like something I want to learn to do … you’re a trooper! Ummmm…..if I had to just throw something together quickly with limited ingredients it would have been no where near as fabulous as what you made! Seriously, I would have probably made spaghetti (ie- Ragu jarred sauce)…..lol

I just made this tonight – except I added chopped up celery to it and a little bit of chicken stock – so yummy thanks for the idea!
