When I had to go dairy free I was devastated that I would not be able to enjoy my favorite cuisine anymore. The truth is, there are many dairy free Italian recipes. Enjoy!

I’m only on my second week of my new dairy free diet and falling right back into my routine of eating very sad little meals. Today is a rainy day here at my parents’ house in Connecticut, but we have a big family dinner planned for tonight. The theme is Italian! I usually have difficulty enjoying Italian dishes because most contain dairy. Thankfully my Mom loves to make dairy free versions of our favorite Italian dishes (since she limits dairy too!). I am a big lasagna fan, but it is hard to get past not having ricotta in the middle of each layer. This delicious vegan lasagna recipe sounds like it will make you forget all about the missing cheese! With a tofu ricotta, vegan mozzarella, and a homemade creamy dairy free bechamel sauce, I bet it tastes close to the real thing.
Dairy Free Stuffed Shells – The Minimalist Baker
These dairy free stuffed shells are easy to make and also delicious. I made this recipe using Kite Hill Vegan Ricotta Cheese instead of tofu and it is just as tasty (maybe even better). There are a variety of plant based mozzarella shreds at the grocery store you can use for this recipe. Or try this amazing cashew mozzarella that tastes so much like actual mozzarella!
Sundried Tomato and Basil Arancini – The Minimalist Baker
Many arancini recipes call for parmesan cheese or cow’s milk. These Sundried Tomato and Basil Arancini only require vegan parmesan shreds! My favorite brand of vegan parmesan shreds is Follow Your Heart. I like to add a little bit of red pepper flakes to this recipe for a bit of spice!
