One of my favorite pizza toppings, but maybe the most uncommon, is POTATOES. Here is a Dairy Free Red Potato Cheddar Pizza Recipe.
I haven’t made a potato pizza in a long time. When I saw someone eating mashed potato pie on Food Network, I had to satisfy my craving for starch. I looked online for different potato pizza recipes and came up with a combination of a few. The recipe calls for double what I used, so it should be easy to follow. Here is a fantastic recipe for dairy free pesto if you cannot find any at your local store. You can make this with real cheese or dairy-free!

- Place an oven rack on lowest position and preheat to 500°F.
- On a lightly floured surface, roll dough into a 14-inch round. Generously sprinkle a pizza stone with flour. Place dough on sheet.
- In a large bowl, stir together garlic and oil. Add potatoes, pepper and salt. Top dough with a thin layer of pesto. Add the potatoes, overlapping, leaving a 1/2-inch border. Sprinkle with cheddar cheese.
- Bake until cheese has melted and crust is crisp, about 18-20 minutes. Cut into 8 slices. Serve.
In the future I will add more of each topping: pesto, potatoes, and cheese! This recipe could be made with actual dairy too!
