I spent a good 20 minutes trying to decide what I was going to stuff my chicken breasts with last night for dinner. After searching every cooking website imaginable I gave up and decided I would just walk through Trader Joe’s until something jumped out at me. Fortunately, it didn’t take very long until a delicious idea popped in my head – chicken stuffed with Mediterranean Feta Cheese Crumbles and Eggplant Garlic Spread, baked in Balsamic & Onion Ken’s Marinade. O-M-Gosh. Talk about amazing. I highly recommend this combination – and that you rush to your closest Trader Joe’s, and grocery store, pick up some chicken, cheese, shmear, and marinade, and cook up some scrumptious stuffed chicken breasts on 350 degrees F for 30 minutes (or until center of chicken is no longer pink)!!!!
As a side I roasted red potatoes, broccoli, and baby zuchinni in olive oil, garlic salt, pepper, and rosemary. Mmm mmm good. You gots to cook the veggies for at least 50 minutes though, because the potatoes take awhile to soften.
