What I really love about Purple Carrot is every recipe creates a plant based meal.
Plant Based Meals are amazing for anyone who wants to eat healthy and be energized by wholesome vegan dishes. I’ve found that a following a somewhat vegan diet is easier on my sensitive stomach than if I were to eat dairy and meat heavy dishes. One of the dishes I was sent to make was Butternut Squash Caponata. I love butternut squash and pasta, so it was right up my alley.
Not only was the recipe mouth-watering good, but it was so uncomplicated I was able to cook myself an incredible dinner while the girls ran around my legs. I absolutely loved the step by step recipe for this meal with pictures so that I could make sure I was following the instructions correctly. I also appreciated not having to measure out any of the ingredients, as they were all packed according to the amounts needed for each recipe.
Cooking……
The ingredients were extremely fresh and all accounted for – which is incredibly important when you’re a Mom who rarely remembers everything to buy at the grocery store even with a list. I always forget myself when I’m shopping too, so with a meal delivery service, I’m guaranteed to have dinner a few times a week no matter what.
I received three different meals in my Purple Carrot box for the week. The Butternut Squash Caponata was so hearty and filling you’d almost think there was meat in the dish. I would love to make this dish again for a dinner party! The Buffalo Tempeh Tacos were amazing, so amazing that I bought the ingredients to make them again next week. Plus, I learned how to make a dairy free ranch dressing that I could literally eat with a spoon. The Jackfruit Shiitake Stir Fry with Quinoa and Spinach had the most steps, so it was my least favorite. I’m also not a huge fan of quinoa, but I loved trying jackfruit for the first time.
Results….
I would absolutely order Purple Carrot for myself once or twice a month. The portions are huge so I could eat one meal for 2 days. The fact that each recipe is plant based is fantastic, as one meal would be a surefire way to make sure I’m eating something nutritious.
