Happy Friday! Oh what a week we have had… Ailey has had croup for 7 days and after a second round of steroids, it might just be gone. We’ve been preparing for the arrival of my in-laws – cleaning, hanging photos, etc., and I’m happy to say they’re finally here so we can relax! They flew in from Tennessee last night and the girls were beside themselves to show Nana and Grandpa everything in their new house. Before I shut off from the social world, I’d like to share my Friday Favorites:
Noodles & Company
There’s nothing I love more than a warm bowl of noodles – especially made with zucchini!
I had the privilege of trying out two new dishes at Noodles & Company made with zucchini noodles instead of traditional rice noodles. The ‘zoodles’ are made from fresh zucchinis spiralized in-house daily. I love zoodles over regular noodles because they are full of vitamin C and potassium.
The Spicy Zucchini Peanut Sauté is AMAZING and delicious. It’s made with zucchini noodles, broccoli, carrots, grilled chicken and snap peas in a spicy peanut sauce. I could literally eat this once a week. Bonus – if you’re looking for a vegan meal, just remove the chicken from the dish! 
The Zucchini Truffle Mac is one of a kind, made with zucchini noodles, truffle cheese sauce, and roasted mushrooms. I love that there is a gluten free option, just ask for it without breadcrumbs!

I hope everyone enjoys my Friday Favorites and the beautiful fall weekend ahead. We have a busy agenda, taking our family around to our favorite restaurants, Annabelle’s preschool Scarecrow Festival, and a road trip to the Yankee Candle outlet. Hopefully we can show Nana and Grandpa the gorgeous fall foliage and fill their bellies with delicious New England food.
