Looking for easy summer dinner recipes? Me. Too. Tis the season for being lazy on the deck with a glass of wine, not slaving over a stove. I hate wasting my time in a hot kitchen when I could be having fun with my family. Here are four quick meals to make during the summer.
Summer Meal: Shrimp Boil with Sausage, Potatoes and Corn

One of my favorite summertime foods is a SEAFOOD, especially when I can cook it quickly and easily at home. My Stovetop Shrimp Boil is a little different than the recipe I followed from the Old Bay Seasoning website. Instead of red potatoes, I used a bag of white new potatoes. Instead of sausage I used chicken sausage. Lastly, I added fresh parsley to the broth for extra flavor.
Summer Recipe: Easy Shrimp and Pea Ziti

I found this Easy Peasy Shrimp Ziti summer dinner recipe that sounds amazing. Sprinkled with shaved parmesan and red pepper flakes and served alongside a spring mix salad would make it even better!
Summer Meal: Tropical Chicken Lettuce Wraps

Rotisserie chicken is always an easy go-to for a simple weeknight dinner in the summer. This Tropical Chicken Lettuce Wrap recipe is so simple, but also versatile. You can add a variety of mix-ins to shredded rotisserie chicken to make a chicken salad. Serving the chicken salad in lettuce cups – butter lettuce is my favorite – is light to eat.

Quick Meal: Three Bean Salad

Bean Salad is a summertime staple for many of my family’s cookouts. This Three Bean Salad is an easy weeknight dinner recipe because it can be made ahead of time and enjoyed with crusty bread or crackers. I enjoy the addition of olives and cheese cubes as well. See my Summer Bean Salad here!
