Shrimp Boil with Sausage, Potatoes and Corn
One of my favorite summertime foods is SEAFOOD, especially when I can cook it quickly and easily at home. My Stovetop Shrimp Boil is a little different than the recipe I followed from the Old Bay Seasoning website. Instead of red potatoes, I used a bag of white new potatoes. Instead of spicy Italian sausage, I used a lighter chicken sausage. Lastly, I always add fresh parsley to my broth for extra flavor. Many seafood boils are served with a side of butter – if you’re dairy free like me, use Earth Balance because it melts great!
Easy Shrimp and Pea Ziti
I found this Easy Peasy Shrimp Ziti summer dinner recipe in a magazine at my Mom’s house. Summer pasta dishes are amazing! I would add a bit of shaved parmesan, red pepper flakes, and a light salad (like our household fav: Cucumber, Olive, Feta Salad).
Tropical Chicken Lettuce Wraps
Rotisserie chicken is always an easy go-to for a simple weeknight dinner in the summer. This Tropical Chicken Lettuce Wrap recipe sounds light and refreshing. Serving the tropical chicken salad in butter lettuce cups makes this a light delicious dinner.
