While I work on putting together personal recipes and photos from my go-to easy weeknight dinners, I want to share my favorite easy crockpot dinners for weeknights from Pinterest.

For my last recipe, I’ll give you a sneak peek at a personal homemade dinner I whipped up one evening. You can cook this Tortellini Soup with Spinach and Chicken in the crockpot or right on the stove in very little time. I use store bought rotisserie chicken and fresh tortellini, so the only thing that really isn’t already cooked is the spinach. We love to eat this soup with crusty bread or crackers.
