Every Sunday when I was growing up, my family sat down at the dinner table together to enjoy a meal together. Family dinner was the only time we would all be in the same place at the same time. When my husband and I got married, we vowed to have family dinners together. Here is why you should have family dinner together at least once a week.
Also, in our home we believe is important to teach our children about togetherness. By taking time to listen to one another, without the distraction of television or toys, we are building strength in our family bond. As our kids grow older, we will lead more disconnected lives and family dinner allows us to reconnect.
Family dinners are also the perfect place for parents to be role models for their children. Kids learn by example and will pick up polite table manners and dinner etiquette. I remember learning to eat with my mouth closed and not leaving the table until everyone was finished at family dinners in my house.
In addition, my favorite childhood meals are the dishes my Mom cooked for the entire family. Enchiladas are an easy recipe my Mom taught me to make and I now teach Annabelle to cook. There are many varieties of Enchiladas, but Chicken Enchiladas are a family favorite. My recipe features ingredients from Frontera brand and Wholesome Pantry found at ShopRite.

Here is how to make Easy Chicken Enchiladas for your next family dinner.
Ingredients
2 boneless skinless chicken breasts
1 package Frontera Taco Skillet Sauce
Olive Oil Spray
1 can black beans (rinsed)
1 can kidney beans (rinsed)
1 packet taco seasoning
1 can tomato sauce
2 bags shredded cheese (mixture of cheddar and monterey jack OR Mexican blend)
1 package Frontera Enchilada Sauce
5-7 large flour tortilla shells
Tin foil
Large glass baking dish
Directions
1. Preheat the oven to 350 degrees. Coat a skillet with olive oil spray. Add chicken breasts and top with taco skillet sauce. Cover and cook over low-medium heat for 15 minutes.
2. Shred the chicken in a bowl with two forks. Add one bag of mixed cheese, stir to combine, and set aside.
3. Combine beans, tomato sauce, and taco seasoning in a large bowl. Mix. Spread the beans on the bottom of a large glass baking dish.
4. Fill the tortillas with chicken/cheese mixture. Roll the tortillas or fold the tortillas into a burrito. 5.Place the tortillas seam side down on top of the beans in the dish.
6.Top tortillas with Enchilada sauce and shredded cheese. Cover the dish with tin foil.
7.Bake for 30 minutes at 350 degrees. Remove the tin foil and bake for 4 minutes or until cheese is bubbly.
