My Sun Basket included the required ingredients to make three meals (that I chose!): Vegan Caesar Salad with stuffed tomatoes, Braised Chicken and Artichokes, and Bucatini and Pancetta Carbonara with arugula salad. The meals are packaged in brown bags, labeled appropriately, and the Sun Basket comes with a booklet of recipes for not just my meals, but every other meal I could have ordered this week. May is Mediterranean Diet Month and all of the recipes for my week are influenced by the cuisine of Italy.
Vegan Caesar Salad with Stuffed Tomatoes
The Vegan Caesar Salad was so delicious I may have licked the plate clean. The Sun Basket came with a container of their own vegan Caesar dressing that only required a bit of lemon juice before drizzled over romaine lettuce charred on the stovetop and homemade croutons. The stuffed tomatoes were so easy to make with bulgar wheat, toasted pine nuts, and sautéed spinach. The entire meal was ready in 40 minutes and served two (me and my sister). Ailey wanted a bite, but it was too tasty to share.
Bucatini and Pancetta Carbonara with Arugula Salad
Another meal in my Sun Basket was the Bucatini and Pancetta Carbonara with arugula salad. Pasta Carbonara is one of my favorite dishes, but I’ve never made a carbonara sauce in my own home. I’ve always been intimidated by the requirement of raw egg to create the rich and creamy sauce.
From the pop of the fresh peas and the crispy diced pancetta, to the smooth bucatini noodle, each bite tasted as delicious as the next. The peppery lemon arugula side salad made a perfect side dish. The recipe was extremely easy to follow and the entire meal was complete within 35 minutes. The serving size was for two, but this could have easily fed three people.

When ordering, you can choose one of two options: Classic Menu and Family Menu. I chose the Classic Menu, which allows you to choose 2, 3, or 4 recipes for the week that will serve 2 or 4 people. The wide variety of recipes includes healthy spins on restaurant-worthy dishes, with a mix of global flavors and comforting classics.
If you were to opt for the Family Menu, you can choose 2, 3, or 4 recipes per week to comfortably feed a family of 4, with leftovers for families with younger children. Sun Basket currently offers Chef’s Choice and Vegetarian meal plans for the Family Menu and likes to sneak in vegetables wherever possible for picky eaters. I’d love to try this option next.
