My Bridesmaid Brunch
For music, the girls gave me suggestions for must play songs at the reception. There was a lot of reminiscing back to high school and a little bit of dancing by my maid of honor and her best friend (one of my bridesmaids).
Another question I asked my bridesmaids was regarding our Save the Dates. Everyone unanimously agrees we should design a magnet Save the Date.
What to Serve at a Bridesmaid Brunch
Mimosas and Poinsettas for the Bridesmaids
I served Mimosas and Poinsettas (champagne and cranberry juice) in plastic champagne glasses I found at iParty. I tied red and green ribbon around the stem and wrote everyone’s name and role in the wedding on the glass.
Bridesmaid Brunch Menu
For brunch I served mini toasted bruschetta, pastry wrapped baked brie, and spinach potato frittata. We also enjoyed a vegetable crab dip and fruit trifle cake for my cousin’s birthday. Everything was delicious, especially the frittata my momma so made for the occasion.
Mini Toasted Bruschetta Recipe
1 bag of garlic toasted french bread slices (found w fresh baked breads)
2 cans Italian diced tomatoes
Basil
Oregano
Parsley
Mozzarella Cheese (NOT fresh)
1. Preheat the oven to 350F. On an ungreased cookie sheet, arrange the largest slices of bread. 2. Slice the mozz thinly, and place 1 piece of top of each piece of bread.
3. Bake until the cheese is melted.
4. Strain the tomatoes until most of the extra liqued is gone.
5. In a bowl combine the tomatoes and spices.
6. Spoon tomato mixtures on top of the melted cheese and enjoy!
How easy is that?! Sandra Lee from Semi-Homemade on the Food Network would be proud.
The vegetable crab dip was also really easy and perfect for brunch. I found the recipe on the back of the vegetable dip mix box which I discovered in the soup aisle. I spruced up the recipe a bit, adding shredded white cheddar cheese and garlic salt. I served the dip with crackers but I think pita chips would have also been tasty.
Overall, my bridesmaid brunch was a success. We missed Andrea, a bridesmaid, for she lives in Tennessee. I can’t believe we will not all be together until our wedding day in October!
