Photo Booth, Fish Tacos, and a Recipe Giveaway!

I am still procrastinating on my rehearsal dinner pictures and wedding day recap because I just had to share some important things with you today!

First is a montage of some of the photos from the impromtu photo booth our photographers set up at the reception!!!!

The day before our wedding, Susan asked if she could visit our reception site to scope out something for a potential surprise. I had no clue what she was up to, but when we arrived at the reception and settled in, she showed us what her and Brandon had come up with….a photobooth w/ props!!! These are only 16 photos but I am sure there are a ton more! I know that a lot of people were hanging out in the photo room for quite some time =0)

The second thing I wanted to share with you today is my super duper easy recipe for fish tacos! After we returned from Maui, Mr. Bear has been craving a fish taco. He asked me on Monday if I could make some and to be honest, I had NO clue how to create a f-t that could even come close to being as tasty as the f-ts we ate every day in Maui. I started researching recipes and came up with this:

Mrs. Bear’s Easy Fish Tacos
2 Gorton’s Grilled Tilapia Fillets – whatever flavor you like! (found in the freezer aisle) (photo found on walmart.com)
Medium size tortillas
1 bag of pre-made coleslaw (in the bagged salad section)
Green onion – one stalk, cut into little pieces
1/2 c reduced fat mayo
1/2c fat free sour cream
Juice from 1/2 a lemon
1 tblspn lime juice
Creole seasoning – amount is up to you, but I used about 2 tblspns in the sauce and 2 teaspoons on the fish. I also shook a little into my taco when it was all done.
Garlic Salt – 2 teaspoons
Salt – season to taste
Pepper – season to taste
Shredded cheese – optional

1. In a bowl mix together the sour cream, mayo, lime juice, lemon juice, creole seasoning, garlic salt, salt, and pepper. Refridgerate until needed.

2. Preheat oven to 400 degrees F. In a shallow dish (I used a metal pan lined in non-stick tin foil, but you can use a cookie sheet or any deep baking dish) place the fish fillets. Sprinkle with cajun seasoning and squirt on some lemon juice – so that they are moist.
3. Bake fish for 20 minutes. Remove from oven, drain off any excess liquid on the pan, and bake again for 10 minutes at 300 degrees F. This will firm up the fish so it is easier to break into pieces for the tacos.
4. While the fish cooks, take out your sauce and add 2 handfuls of cabbage to the bowl. I tasted the mixture and found it to be a little bland, so I added more salt, pepper, and lemon juice (2 squirts). Set aside.
5. Remove fish from oven and allow it to cool before cutting into bite sized pieces – I tried to shred my fish but it didn’t work. I also squirted a little more lemon and shook a little more cajun seasoning on the fish pieces so that it stayed moist.
6. In a skillet, heat a tortilla over medium heat for 15 seconds. Turn the tortilla over and add the pieces of fish. Cover the fish with the cabbage/sauce mixture, sprinkle in a little cheese (we used shredded mozz), and finally another layer of dry cabbage. Heat for a few seconds until the tortilla has started to crisp.
7. Fold the tortilla over into a taco and put it on a plate! Here is a picture of the inside… I don’t have one of the taco itself.
Mr. Bear rated my tacos a 10! I usually ask him to rate my new creations on a scale from 1-10, so that must mean they were really good! I ate my taco with a fork and knife, dividing the taco into little triangle sections like a quesadilla. I think I am going to try fish quesadillas next!

    Your photographers were seriously fabulous! After seeing the photos and hearing all of your great stories about the sweet things that they did to make your wedding absolutely perfect, I am convinced that they just may be the best photographers ever!!
