Dairy Free Banana Bread

Easy dairy free banana bread is moist and delicious.

Ingredients
  

  • 1/2 c Butter Substitute Earth Balance
  • 4 Ripe Bananas
  • 2 large Eggs
  • 1 tsp Vanilla Extract
  • 2 c Flour
  • 1 c Sugar
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 1/2 tsp Cinnamon

Method
 

  1. Preheat oven to 350 degrees F. Spray loaf pan with non-stick cooking spray.
  2. Place butter in a microwave safe bowl, cover, and microwave until melted (30 second).
  3. In a medium bowl, mash bananas with a fork. Add melted butter.
  4. Add vanilla and egg. Mash mixture until there are no yellow streaks from the eggs to be seen.
  5. In a second bowl, mix the dry ingredients together.
  6. Add wet ingredients to dry ingredients and mix until smooth. There might be a few banana chunks, but that's ok! Pour mixture into loaf pan and bake.
  7. Bake for 45-55 minutes or until a toothpick comes out clean from the center of the bread.
  8. Allow Banana Bread to cool for 10 minutes before enjoying!
