Becky's Stuffed Mushrooms

Ingredients
  

  • 2 packages White Mushrooms
  • 1/2 Large Yellow Onion minced
  • 2 Peppers, any color minced
  • 3 Celery Stalks minced
  • 3 cans Minced Clams
  • Italian Style Breadcrumbs

Method
 

  1. Clean and scrape out mushrooms - careful to do this without breaking, but scrape out as much as possible
  2. Pre-heat oven to 375 degrees
  3. Sautee onions, peppers and celery in a little bit of olive oil
  4. Add in clams with juice
  5. You can also add a splash of white wine
  6. Season with a little salt, pepper and garlic powder. Remove from heat.
  7. Slowly mix in breadcrumbs, a little at time. You don't want too much, you really just want it to absorb the juice
  8. Stuff mushrooms with filling
  9. Melt butter and add some white wine in the skillet. Drizzle over mushrooms
  10. Cover mushrooms with foil and bake for approx. 45 minutes.
