The Easiest Homemade Alphabet Vegetable Soup

The Easiest Homemade Alphabet Vegetable Soup uses frozen vegetables and pre-made broth. It does not contain tomatoes and remains thicker than traditional soup. It's perfect for a cold day!

Ingredients
  

  • 6-8 cups vegetable broth less for chunky soup
  • 1 cup small cubed potatoes peel + dice potatoes
  • 12 oz frozen vegetables your choice
  • 1/4 cup Alphabet Pasta
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp salt + pepper Or more to taste!
  • Grated Parmesan Cheese Topping!

Method
 

  1. Pour broth into a large dutch oven or pot.
  2. Add potatoes and simmer on medium low heat until they are tender when pierced with a fork. (You MUST cook the potatoes first or the vegetables become mushy.)
  3. Add the frozen vegetables and pasta.
  4. Add the onion and garlic powder, salt and pepper.
  5. Once the pasta is cooked (al dente, not too soft), remove from heat and serve with a sprinkle of parmesan cheese!
