Method
- Pour broth into a large dutch oven or pot.
- Add potatoes and simmer on medium low heat until they are tender when pierced with a fork. (You MUST cook the potatoes first or the vegetables become mushy.)
- Add the frozen vegetables and pasta.
- Add the onion and garlic powder, salt and pepper.
- Once the pasta is cooked (al dente, not too soft), remove from heat and serve with a sprinkle of parmesan cheese!
