Cake Ingredients
1 box Spice Cake Mix
1 can pumpkin pie filling
2 eggs
2 tablespoons vegetable oil
1 tablespoon pumpkin spice seasoning
Frosting (optional)
2 cups powdered sugar
1 tablespoon vanilla
2 tablespoons melted butter
1 tablespoon cream cheese
1/2 cup half-n-half
Directions
- Preheat oven to 350 degrees.
- Grease sides and bottoms of muffin tin (I used cooking spray).
- With an electric mixer, blend cake mix, pumpkin pie filling, eggs, vegetable oil, and pumpkin spice seasoning in a large bowl at low speed until completely mixed together.
- Pour batter into muffin tins.
- Bake 30 minutes. Let cool completely. Drizzle with optional frosting.
- Frosting: With an electric mixer, blend cream cheese, vanilla, and butter on a low speed. Sift in the powdered sugar and add the half-n-half. Blend on low until smooth.
I had a friend bring these in at work and his wife added crasins and white chocolate chips! So yummy!
